When I started at ITT Tech, there were 35 students that started in my program (Information Technology: Computer Network Systems). Only 3 were in my graduating class.
They don't just pass everyone and push them out the door.
Many people failed classes and had to repeat them....some more than once.
To address the whole "only being prepared for help desk jobs"....with an associates degree alone, that may be true...but from any college.
Most employers not only want a 2 or 4 year degree, but industry certifications (A+, Network+, CCNA, MCP, MCSE, etc.)
This is something that all my teachers stressed about.
They even offer some "certification boot camps" to help students prepare for these certification exams.
I don't care what college or university you graduate from....employers want you certified.
As a side note...ITT Tech offers some of the best hands on experience out of any college I have seen in my area....that includes Marshall University....you know who they are right?
I also was using new dell pc's with windows XP the first year and windows 7 the second year, we used windows server 2008 SP2, MS Office 2010 (then 2010 the last 6 months)....and before anyone asks why they used these and not the newest most up to the second release of the software....most of the industry doesn't change OS or programs the moment they come out....go with the tried and true till the newest becomes the industry standard.
So we learned on what was currently the most wide used programs in the industry.

And if anyone with any associates degree from any school acquires a CCNA, CCNP, Security+, MCSE, etc....most employers will hire them...like I said...certifications matter most...if you are going on a degree alone....almost any dumbass can barely pass every class at any school with a low GPA.
